There sits Dr. Howard Shapiro's point: dieters imagine that they're saving calories by eating the "virtuous" snack on the left, whereas in reality they're depriving themselves of the mountain of food on the right.
Dr. Shapiro believes that there are no bad foods, no right or wrong reasons to eat, no perfect number of meals in any given day. He doesn't believe in telling clients at his weight-loss clinic in Manhattan when they can or can't eat. Some of them are celebrities and corporate executives with such busy lives that mealtimes are often unpredictable. So Dr. Shapiro reassures them that a calorie is a calorie, whether you eat it before or after 9 p.m. He helps them lose weight by showing them different foods, set side by side, and how the seemingly healthier choice might actually be equal to or greater in calories than a bunch of foods that would seem to be off-limits to someone trying to lose weight.
In Picture Perfect Weight Loss, he uses photos of foods to demonstrate these choices. Thus, a "healthy" carob bar is shown to be equal in calories to 10 scoops of Italian ices. A 10-ounce loaf of crusty bread is shown to be equal to a tiny dish of Chex Mix. Two ounces of reduced-fat cheese are shown to be equal in calories and fat grams to two ounces of salami.
The photos pit all types of snacks and many meal choices against each other, and account for sugar, salt, and starch cravings. The text--easy to read even when discussing scientific principles that scientists don't fully understand yet--covers everything from exercise to nutrition labels to menus from some of the world's top restaurants, with the healthiest food choices highlighted.
Regular dieters, though, might want to skip all that until they've read the appendix explaining why the most popular fad diets--from the Atkins diet to Suzanne Somers's--are unhealthy, overly restrictive, or just based on misunderstood science. I use this book as a reality check when I start to slip into bad habits. By flipping through the photo camparisons, it helps me to focus on the issue of making better choices. I also wish that there were some meat comparisons, though.

I love showing this book to friends- the fact that you see it in pictures really makes a difference. People "get it" more. The only thing I did not like is that shapiro highlits a lot of products (veggie sausage, sugar-free candy, etc) that are not available in my country, and are processed with too many chemicals to be really healthy.
Explained why my Weight Watchers program is working so well.........2007-03-16
I am on the online Weight Watchers program where we eat lots of fruit and vegitables and avoid processed foods. I am losing weight effortlessly but did not know why. This book explains with beautiful photos how some foods are calorie dense and other foods are calorie light. By learning which foods are the least dense in calories, such as fruits and vegitables, you too can lose weight the easy, healthy way.
This shows many amazing photos of types of foods showing that you can have a ton of many types of foods and not take in many calories at all, but that one bagel will equal about ten other delicious foods, enough for the entire day's food and then some.
If you want to lose weight slowly, steadily and in a healthy way and keep it off first join Weight Watcher's online and then get this book to explain why it works so well.

A lot of it seemed to be filler, but the info was put together well. It was also written in an easy to read personal manner. If you are interested in giving some nice (no pain) sensations to your gal and have been having troubles this book will help you out.

First class research and writing, just like their book Threesome, ASFC gives us new and interesting information that encourages couples to take small steps as they gradually explore the often considered but unknown "forbidden zone". It's not Pee Cee, thank God! And it's the only book out there that's aimed at couples. With 14 years of private practice in marriage counseling I know that couples are wise to explore every aspect of the Joy of Sex. This best book I've seen to help couples. Great variety of Zone Diet recipes. Some of them are a bit time consuming but the end results are always outstanding. Very high tasty level on all of the recipes which is very important when one is dieting.

I first came across this book at the library. I was looking for a diet cookbook. I am so glad I found this cookbook. The recipes are easy to follow and are so delicious. I only made one recipe that I didn't like and that is because I don't like dill pickles. This cookbook has helped me get started on eating healthy and enjoying it. Wonderful vegetable and fruit combinations. Best cookbook I ever bought. I would recommend this cookbook even if you don't need to lose weight.
Quick & Easy with a Touch of Class.......2006-06-06
Fantastic Cookbook!
My boyfriend and I started doing The Zone a week and a half ago, and this cookbook has become our Bible. He comes home from work EXCITED to see which recipe I've chosen for the night, even though we're dieting. Its ingredients are the perfect combination of accessible and unique; Rachel Ray meets The Iron Chef.
The recipes are easy but include enough "new" foods to keep this diet from getting boring. For people who like trying new foods but hate complicated cookbooks that include lots of expensive items (from which you only use 1tsp, each, of course) - this cookbook is for you! You should have Protein Powder and lots of avocados and/or nuts in your kitchen; other than that, no major purchases required.
The book is divided into chapters based on meals (Breakfast, Lunch, and Dinner) and Snacks. The Breakfast section includes smoothies with fresh & frozen fruit, omeletes with feta, vegetables, and seasonings, as well as hot cereal, yogurt, and cottage cheese variations. Lunches and Dinners are interesting takes on traditional, non-Zone sandwiches, salads, burgers, and soups. They include not only chicken and turkey, but also fish (mahi mahi, sea bass, tuna, scallops, AND shrimp), pork, beef, tofu, and tempeh.
While I wish each ingredient listed how much of each "Zone block" it contributed to the recipe, substitutions become fairly obvious as you begin to recognize the Zone block system. To facilitate substitutions, I recommend pairing this book with one of Dr. Barry Sears's books so that you have a firm grip on the diet itself. Each recipe in Ms. Walker's book is converted into Zone Blocks, but you'll need the other book(s) to explain what those blocks are and how many you should eat.
I almost forgot the most important thing - the food TASTES SOOOO GOOD! (And not diet-good; GOOD-good!)
Zone cookbook.......2006-03-11
We have tried four dinner recipes in this book so far, and all were good. I was surprised to see that many dinner recipes are only recipies on how to prepare veggies, and then the end of the recipe it says "Tip: this dish goes well with grilled chicken or beef" etc, so you are left on your own to figure out what meat to serve and how to prepare it.
However, this cookbook does have a great variety of recipies that don't just use the same old zone veggies.
The baked salmon on fennel and mustard dill sauce recipe was excellent (and soo easy) and left my 6 year old asking for a third helping!
Beautiful pictures of the finished meal, but I got a kick out of one salad that was pictured with bow tie pasta...which was not in the recipe and is a zone diet no-no!
absolutely delicious meals.......2005-11-16
the meals in this book are so tasty and easy to make, i keep coming back for more every day. i found the variety of vegetables, both standard and unique, plus the variety of herbs and spices in almost every recipe, just knocks my socks off everytime i try a new recipe.
i looked into having zone meals delivered, but the cost was too prohibitive. i like to cook and figured i'd save money by buying a recipe book and doing the cooking myself.
i have not studied the zone diet and only casually know how it works (i've tried just about every other diet). i stuck to these recipes about 80% during the week and about 50% on the weekends. After 6 weeks, i lost 15lbs, my colesteral lowered from 200 to 160, and my grocery receipts added up to about 50% less than zone delivery service in my area.
i am a working mom and don't have a lot of time to cook. i found most of the recipes simple and easy to make, esp the breakfasts. some ingredients are unique, but if you're in a metropolitan area, they should be readily available. the uniqueness just adds to the amazing flavors. the only problem is that they discontinued the zone perfect protein powder with out a substitute. this cuts out most of the smoothie recipes and a couple others. i also don't do tofu, and a few of the lunches and dinners are tofu based, so i skip some recipes. However, i do make most of the recipes and i am always satisfied after every meal and don't feel extra hungry in between.
i think the biggest winner in the "diet wars" is the one that keeps people coming back with or without willpower. this book does that for me. these recipes make dieting and healthy eating a no-brainer and i keep going back for more. this book is a real winner!

This book is great for understanding how to shape a brow that best suits your face. I believe it is intended for use as a text book in cosmetology and esthetics courses, but it provides great in-depth information for styling your brows. If you're seriously interested in learning what styles and shapes suit your face type this is the book for you. I was thourougly satisfied.
A disappointment.......2006-10-12
This book was a huge disappointment. It was very basic and very vague. For example, it would tell you to shape the brow to make their face look longer or shorter, but it wouldn't tell you how to shape the brow in order to do that. All the pictures were small, in black and white, and it was hard to see any detail. I kept on reading on, hoping that I was going to get to the good stuff, but the good stuff never came. I truly felt like I learned nothing and it was supposed to be an instructional book. A waste of money. I was debating returning it, but it doesn't seem worth it to go to the post office and have to pay for shipping it back.

This eyebrow book is the best educational
material on the market.
After you have read the book do your career a favor and
take the test provided with the book.
I personally learned so much from this book and I am a
professional in the field of Permanent Makeup. In my opinion
this is a must read book for anyone in the field of makeup.
This is a book you'll keep in your personal library for years to come.

Not much advice.......2003-07-16
I was disappointed in this book- not much practical advice, almost nil hair cutting advice. He advises not washing hair every day. Ugh! I see plenty of unwashed hair and it isn't attractive. I don't use shampoo every day, but do use conditioner. Also, he is a big believer in setting hair with rollers. If you ask most males, their opinion is that women in hair rollers are very unattractive-good way to ruin a marriage. The hair styles are unimaginative (and need a set). Often he sends you to a "professional stylist" rather than helping you take care of hair on your own (Gray hair-difficult to color, go to professional.) Didn't learn anything new-all seems to be common sense.
Not Just For Nick Chavez Followers!.......2001-12-28
Nick Chavez, is an actual Stylist who owns his on salon in Beverly Hills, whom I discovered through QVC. His products are excellent and so is his book. He has done an excellent job. His book is beautifully illustrated, and his tips and directions on how to syle and take care of your hair are easy to follow. He sincerely cares about a woman's hair and how she treats it. Nick covers every hair texture, which many books do not. One added bonus for those of us who are followers of Nick, he includes a wonderful little bio about how he got started, his relationship with QVC, and his family (wonderful picture of his beautiful family). Buy the book, his tips do work, and buy his products!

I have seen this guy on homeshopping network, and thought he had great tips on do's and don'ts for hair. And seems like a person who really cares for peoples hair. Started reading the book and finished before I went to bed. I don't much about hair but this book helped me to learn to care for my hair.

The only problem as Deepak notes is that there is scientific evidence that yo yo weight control is not good for your health. With the exception of those who are clinically obese, over 25% above the normal weight for your body type, the yo yo'er is a big risk. I have successfully done just about every diet out there. The only problem is that each of them is based on excluding a food group out of your diet. After a while you crave that food group.
Talk about the "Power of Coincidence" part of another one of Deepak's books, I was at a party, and this girl who was in great shape said, "It's all about moderation and exercise" I heard that from others who have always been in great shape all their lives. The only problem is that I can't think about restricting portions or counting calories. Then along comes Deepak with the perfect answer. His program is simple, for the first two weeks only eat when you are truly hungry. He identifies the different levels of hunger, and assigns them a number. 0-1 is the first level. You feel real hunger, it is gnawing at you. This is the time when your body is prepared to assimilate food. Then you have the levels in between which is when we eat when we are not truly hungry. Maybe because it is dinnertime, or maybe because we have emotional needs that are not being met, and we are substituting food. Emotional eating as a substitute. When we are truly hungry at level 0-1, we then eat, and concentrate on what we are eating. Don't watch TV, don't talk just absorb the food. Almost on a spiritual level, you are welcoming the nutrition into your body, as compared to watching TV, talking on the phone, and scratching the cat while you are eating :-) then when you are done, you feel frustrated because you never had the "experience" of eating. In frustration you go back and eat some more. What he tells you to do is to eat until you reach level 6, which is the level that you are completely satisfied, but not over stuffed. He tells us to eat until our stomachs are about three quarters full. This is not deprivation, it is satisfaction. Furthermore, he is not telling us what to eat. When you body is telling you it is time to eat pasta, eat it. Don't over eat it, just enough until you are satisfied. This really works. I just went through the Thanksgiving holiday, even over eating on Thanksgiving, having chocolate cake on another night, and ice cream on another. All the while eating the way he taught me on the others. I am down 4 pounds over the holidays, and now I am down 5 1/2. These are no effort results. Who cares how long it takes.
Here is another key component. After the first two weeks, when he tells you to listen to your body, feel your stomach, and eat only when you are hungry, he leads you into week 3 with eating your biggest meal in the middle of the day. In Europe this is a tradition. During the morning, you should eat very little, if at all. I do this also, but I listen to my body, and if I am entering into a heavy labor day, I eat a hearty breakfast. If I am not hungry in the morning, I have green tea with mint, and seasoned with non-fat milk. Then for dinner, I eat light also, which is his recommendation. Either soup with a few pieces of toast. (Whole GRAIN toast is the most wholesome and dietetic) or I will have a light salad, or I will have whole grain cereal with non fat milk, fresh fruit or Del Monte brand quality canned fruit . So my overall day is one of fewer calories, but never am I sacrificing my pleasure. If my body says, I am at level 0-1 I eat. I don't sit down to dinner at 5 or 6 pm just because it is dinnertime and eat. If I am not hungry, I don't eat. Well duh, why have I been cramming a full meal into my body all along, even when I am not hungry, just because it is "dinner time". He says a pound a week is what to expect. With more exercise, expect more. Here is where he shines again. He gives us several Yoga poses that we are supposed to get into and hold for 5 seconds. Increase flexibility, strength, stamina, balance and generate a sense of well being in only 10 or 15 minutes. You can repeat them as you grow.
Now let me get onto something that is just as important. I am 55 years of age. Recently I started having what is known as Acid Reflux Disease. I am normally a perfectly healthy person. What I have been experiencing is waking up in the night, with gas trying to leave my body, but because I have been eating dinner at 8pm, then having a double chocolate pudding at 10:30 or 11pm, I have been having that problem. Gas trying to leave my body, being blocked by food in the way. So it pushes the food up above the esophogeal sphincter, burning the lining with stomach acid, and that is what they mean by acid reflux. No matter what I ate late it was a problem. Then I tried Deepak's eating routine as spelled out in this book, and I have not had even one single night of this problem. Forget taking medicine to mask the symptom, fix the problem instead. I even had Gastritis one night, where I woke up with SHARP gas pains in the upper part of my stomach area, and was wondering if I was having heart problems. I read in Back to Eden by Jethro Kloss about the causes, symptoms and treatment of, and was great relieved to see it was gastritis. (I highly, highly recommend Back to Eden as well)
So what did Dr. Chopra do with this book? He gave me back health, and gave me a way to lose weight for the rest of my life. A pound a week is fine with me. I'm not deprived in any way; I simply am no longer over eating. As a matter of fact the light mornings, and or light evenings are a miracle cure for a weight problem. Now I look and say, hey, be in perfect shape by next fall, no problem. I can do this forever. Maybe I can up my exercise routine and get there even faster.
By the way he calls the book "Perfect Weight" because he is not interested in you being skinny. He wants you to pick out the weight you want to be, and to be happy at that weight. (As long as the number is not at the level of obesity) When you are happy at a certain weight, your body shows it. You walk it, talk it, and exhume it. Like they say, when you look good, you feel good.
Including ginger in your diet, and sipping hot water during the day, I haven't done that yet, so ignore the skeptics. I'm perfectly happy with doing the rest of the program. I know I will introduce more ginger into my diet, and I will include more Green tea with mint very hot as a means of sipping hot water. Hey the rest of the program works, why not that part too.
This program is great. I know how to lose 6 pounds in a week, only to grow tired of the regimen. I think I will do this instead, and live a little now, while I am on the pathway to health and happiness. I highly, highly recommend this book. Thanks for your time.
Not-So-Perfect Book about Perfect Weight.......2004-04-01
This book was less than helpful for me. First of all, the section on figuring out your body type was confusing and I did not come up with a clear-cut answer. Although this book contained some interesting theories and ideas, the majority of the techniques and suggestions are completely impractical for anyone with a normal life, schedule and job. For example, I work from 8:00 am to 5:00 pm, and most days without a lunch "break". I eat in the car on the way to my next client. So how am I supposed to eat a large, hot meal at a specific time, made of freshly cooked food and not leftovers? Really, unless they invent microwave ovens for cars, it's not going to happen. Also, some of the other ideas were just downright unappealing to me, bordering on disgusting (drinking boiled warm milk and sipping hot water with ginger all day while eliminating cold drinks). This plan may be very effective for the independently wealthy who are able to sit meditating in a beatiful natural setting and have a personal shopper and chef to wait on them. But for the rest of us, this book does not contain much practical advice for people with busy lives. I know myself and this is a weight loss program requiring too many radical changes and impractical ideas that I would never get past the first week. I found this book to be a not-so-perfect weight loss theory.

For years I read self-help and motivational books. Like 7 habits for highly effective people, Life strategies - Doing what matters doing what works and the likes. But never having dedicatede the time and effort to start the procces to actually put my knowleged into practical application.
My new-years resolution for 2001 was "More love for me, More love to what I do!" And come feb. life handed me an oppotunity to drop off the radar and start practicing what I had been preacing to my self for years.
I had been over weight since I was 13-14 years old.
Simplyfied but true, at 137 kg, being fat was my ultimate excuse for anything wrong that happend in my life.
So I decided to focus my attention to turn the tabel and start showing myself the love I felt I lacked.
I had known about Chopra for years and when I came across this book I thought "Why not this way!" and bought it.
To cut an already long story short :-)
Now a year and a half later I'm at 88-90kg (Down some 50kg)
Wow, but the most important points I will stress to you wanting to use this book as inspiration and guide. Drink the boiling water and don't focus on how much you loose in Lbs./Kg's, but how much you show your self that you're worth it, by sticking to your plan. And don't forget... If you fall of the horse - TRY AGAIN! Best of wishes and loads of love to you all - You ARE worth it, you just wait and see ;-)
Not very practical.......2002-01-16
This is a well written and informative book. Unfortunately for me it is not a practical one. Sure if I changed my life around completely I would be able to follow the guidelines of the book - but who can do that when they have to earn a living?
If you are retired or without any permanent committments then Deepak's book may just work for you. Read it enjoy it but don't necessarily expect to use it.
Small but powerful.......2001-04-29
I was amazed at how much information was packed into such a modest looking book. I read it twice and made so many notes. I borrowed this copy but am buying one for my own reference. I also researched blood type dieting and it all ties in together. The guidelines and information detailed in Perfect Weight make dieting obsolete and transforming my lifestyle into changes my body is craving naturally. Stress free and pleasurable. Simply the best advice I've ever read on the subject.

The REAL way to weight loss through positive and healthy changes.......2007-02-11
I have successfully lost weight in the past being mean to myself, hating my body, and punishing myself with very low calories, forbidding any fun, and hard workouts. In the end--I still wasn't happy, or happy with my body, and I even injured my knee pushing too hard in a workout.
The Gurgeviches offer a better way. I love this program. I teach yoga, and these 'self hypnosis' sessions closely resemble guided relaxation and yoga nidra. As proof: today, in line at the grocery store, I picked up the new dark chocolate bar. After a few moments, I put it back! That's HUGE! It's the little things, like really learning to listen to yourself and 'eating whatever you want while reaching and maintaining your perfect weight'.
I work at a health food store, and people constantly spend up to $100 on pills, hoping they'll find the magic one that effortlessly melts the pounds from their body, and in the meantime putting some potentially dangerous stuff in their bodies. Try a healthier, more positive way! With this program you will end up LIKING yourself as well as looking and feeling healthier, which is what it's all about.
Warning: you might just get the magic solution! It really is wonderful to make some of these small choices, like forgoing a candy bar without being deprived. It's a change of paradigm, or just a different way of thinking about food and our relationship with it. I am learning to want the best for myself. Americans can definitely learn more in this department!
The book suggests you read the first three chapters, then you can begin using the cd and finishing the book. It has wonderful inspirational quotes, and background into the history and research behind self-hypnosis. It even has a foreword from Dr. Weil, whose name will tell you it's not a bunch of smoke and mirrors. The cd has about 7 tracks, 1 instructional then five of different hypnosis sessions (i.e. exploring our history with food, a rescue rememdy for cravings, etc.) The last track is a powerful, positive message about setting intentions. It's all very 'yoga-like' in a way, too, so if you love yoga, you'll find this book very familiar in many ways.

This is a wonderful book for anyone whether you need to lose weight or gain weight... or even if you don't need to lose or gain but just need to eat more nutritiously this book is for you. It is wonderful because the focus is on eating foods that are nutritious and healthy... or foods that "support your perfect weight" It's not about dieting at all! And the self-hypnosis Cd in the back of the book helps you crave foods that support a healthy weight and helps you desire portions that are just right for you. If you are at all familiar with Dr Andrew Weil's Anti-Inflammatory Diet you will agree that The Self Hypnosis-Diet Book and Cd wonderfully support it. This book is for everyone... and it works!

Sears wants you to think he has come up with a complicated system which he calls The Zone.
In reality, all you need is to eat naturally, like our ancestors did thousands of years ago. Eat greens, vegetables, berries, fruit, mushrooms, nuts. Eat lean meat (our ancestors hunted for healthy, lean animals). Eat egg whites, but avoid yolks. Most of the modern contaminants stick to fat molecules, and yolks are mostly fat. Plus it's the wrong type of fat, as chickens are not fed properly. Eat wild fish (but not too often; don't forget about pollutants).
That's it. Forget grains (and everything made from them). Forget potatoes and hard beans, soda and juices. Forget vegetable oils. All that junk is completely unnatural for humans to eat; our ancestors couldn't imagine that was edible. And that's why we have diseases that they didn't have.
Forget milk. Milk is only good for babies under 3 years old. Studies show that milk (and even yogurt) causes hyperinsulinemia (insulin "spikes" that lead to diabetes etc.) in adults.
Yes, his advice to take fish oil is great. Farm-raised animals are fed with junk food; consequently, they lack certain fatty acids that are vital for our health. Fish oil is a convenient way of restoring the balance. But Sears' fish oil is not the purest and cheapest on the market.
I'm a physiologist, and I've helped a number of people to change their eating habits. Those people have gotten rid of many problems, like obesity, allergies, asthma, arthritis, and excessive fatigue. And they don't complain that the food is not delicious enough. They learned to use their imagination a little bit and combine various healthy foods to create their nice and simple "recipes", and realized they enjoy their food even more than before.
More figuring out if you're female.......2006-07-04
The Zone is a great diet if you have good recipes (not many in here) and if it has the proportions that you need for your personal meal. I've gotten a few good ones out of "What to Eat in the Zone". There are two different weekly menus - for women and for men. Not so in this book. It is based entirely on men. If you are a woman, you have to figure it out for yourself how much to cut down on the ingredients. Some things are obvious - if it calls for 4 oz of meat, you go to 3 oz. But the rest of the recipe is too difficult to figure out. Some people say the Zone is complicated enough as it is, and this book doesn't make a case against that, unless, of course, you are a man.
Also, the desserts are usually figured for 4 to 8 servings. If you're the only one in the house on the diet, too bad. These aren't things that freeze or store well either.
I'm glad I didn't pay full price for this book, as I'd be disappointed.
Not enough edible recipes.......2006-06-12
This book was good in that I could skim through 3 short chapters and understand the Zone concept completely. It's really all I needed to know to get going. Also, the quick list of food blocks in the back was great. However, the recipes are gross. I have never seen so much cabbage in a cookbook. Just gross. The Formula has better recipes.

I'm a Zone diet believer - but this book is a serious letdown. Two major problems with this worthless book:
1. Almost all of the recipes involve *far* too much preparation - the title is *very* misleading.
2. I find it hard to believe that anyone actually prepared these recipes, and thought they were *good*! Most of the meals are horrible due to the *huge* proportion of vegetables. I mean, an omelet with over 3 cups of asparagus???

As usual, I was impressed with Dr. Sears' commentary on his Zone diet, but I was fairly disappointed with the recipes in this book. I was happy I bought it used because I never really open it. The only thing I actually use from the book is the list of mix-and-match snacks at the very end. The recipes are horribly complicated, time-consuming and call for ingredients you probably wouldn't normally have in your kitchen. I have yet to actually make a meal from this book because I simply do not have the time. I'm sure that if I did, it would taste wonderful, but because the title of the book "Meals in Minutes" is so far from the truth, I'm giving it a 2 out of 5. If you're thinking about purchasing this book, go with a used edition, and keep in mind that you won't be getting quick and easy meals ... but rather gourmet meals that will take about an hour to prepare and make.

Fantastic book!.......2007-02-14
I have by now made six of the recipes in this book, one of them (the brownies) three times. Most cookbooks that I keep have an eight in ten success record. This book, however, is ten out of ten. The brownie recipe is one of the best I've ever tasted and certainly the best I've ever made. The fruitcake ended up being the highlight of a recent holiday potluck. The coconut poppy seed cake was the perfect birthday cake, and the reason I'm reviewing the book at this moment is that I handed a slice of spice cake to a co-worker who praised it for a good three minutes.
I always knew Malgieri was a great baking book author. I didn't realize how great until just this moment. I haven't had a failure yet from this book, and I can't even say that about classics like "The Joy of Cooking." Bravo, Mr. Malgieri!

a simple and easy book for the everyday baker.......2007-01-06
I am a starter baker, so my husband bought this book for me as a Christmas present. I love the concept presented here by Nick Malgieri - real ingredients (real butter, real sugar, etc), less the amount, and still delicious desserts. I have tried two recipes so far, and both have turned out well (even though the tart crust contains only THREE tablespoons of butter, a minor miracle indeed!). What I also like about this book is that the ingredients and the equipment are simple and common in local supermarkets. None of the recipes requires fancy, exorbitantly priced rarities from the other side of the world. In addition, the recipes cover a range of dessert genres: chocolates (with an entire section devoted to it), cakes, tarts and pastries, ice creams, cookies. Nick also teaches you the basics of ingredients and baking techniques, along with helpful tips - so the book is educational as well (my husband was reading it for fun the other day!). One thing that this book doesn't have, but that I would've appreciated having, is prep time. Otherwise, no complaints from me. I look forward to trying all the recipes in 2007!
Lightened Desserts Done Right. Buy It........2006-12-29
`Perfect Light Desserts' by baking teacher extraordinare, Nick Malgieri and veteran cookbook author David Joachim is a classic meld of baking technique and substitution cooking, fitting the skills of the two authors. There is probably no other baking writer's work on a `healthy' baking book I would expect more from than Malgieri, since I always go to his books first whenever there is a specific kind of recipe I wish to make. He doesn't always have what I want, but every time I use his recipe, the results exceed my expectations. I have even found better recipes in his book, especially `How to Bake' than I have in books which specialize in the subject I am searching.
David Joachim's contribution is utterly appropriate, as his latest opus was `The Food Substitutions Bible', being an encyclopedia of what ingredients, as in lower calorie for higher calorie, can be swapped for what.
The authors' introduction shows their technique is entirely in the direction I would have hoped. They use no `non-fat' ingredients and no artificial sweeteners, although they do use `lowered' fat products. Just as I am fond of Rachael Ray's take on fast cooking without relying on prepared convenience foods, these authors fill their book with low calorie and low fat recipes by concentrating on those recipes which tend to be lower in the bad stuff to begin with.
There is little mystery to how the recipe slimming is done. First, as stated above, the authors choose recipes that are not high in sugar and fat to begin with. Second, high fat ingredients such as dairy products are replaced with `moderate' fat substitutes or dairy products with extra body such as buttermilk or yogurt. Third, fat is replaced with vegetable products such as applesauce. Fourth, rich icings are removed, so bulking up with rich stuff is an option. The classic examples of all these techniques put together would be a cheesecake recipe replacing cream cheese with ricotta and a carrot cake which makes heavy use of vegetable textures to begin with. Both these examples are also classic cases of picking good recipes to begin with. The ricotta cheesecake is not a diet faddy invention, it is based on an old Neapolitan recipe.
The authors claim to have maintained reasonably sized portions. I suspect a good symptom of the Americans' inflated notion of portion size is that these portions seem just a bit on the small size. When I am not in `dieting' mode, I would not imagine getting 8 portions from a 9-inch fruit pie or even less 16 portions from a 10-inch Bundt pan cake. But, the portions all seem to be of reasonable size, and most of the time, the calorie count for the portion is actually well below the target of 300 calories per portion.
One corollary to the fourth technique above is that there are very few double crusted pie recipes in the book. And, the pie crust recipes are all for a single 9 inch piecrust or maybe a 10 inch tart crust. Virtually the only caveat I have about the book is that unlike some of Malgieri's other books, this is not a serious tutorial on baking techniques. This is not to say there are no good guidelines and lessons here. Just the opposite. It's just that you will do much better with this book if you are already a fairly adept baker. The recipes for the pastry crusts, for example, assume you know most of the tricks of the trade in making a nicely flaky crust with a food processor. I am not overly fond of using the food processor and I do fine with my old-fashioned dough cutter. But, since these recipes use less butter and even less water, I suggest you go along with the recommended food processor technique, as this will work better on the smaller quantities.
On the other side of the coin, I find things in this book that I would expect and do not find in a lot of other books. My favorite is a little table showing when many popular fruits are in season. Unless you are a strict carbophobic, it is clear to both me and the authors that fruit is one of the very best ingredients for healthy desserts.
One thing to take very seriously is that this is not a book on baking in general, but only on DESSERTS. This means there are no recipes for lower calorie biscuits, breads, muffins, or breakfast pastries. But, you do get a generous helping of recipes for vegetable bulked breads.
It is no surprise that the book starts with chocolate, as that seems to be everyone's favorite dessert ingredient (except for my mother, probably because she spent several decades working in a candy factory). The very best news about chocolate is that not only is it not, in itself, fattening, it is literally good for you, just like tea and (dare we hope) coffee. The bad side of chocolate is from the level of sugar added to cut its natural bitterness. The authors accommodate this by using sugar-free baker's chocolate plus complex sweeteners or use Dutch process cocoa power, which is less bitter than unprocessed cocoa powder. My only regret here is that while there are many fine chocolate recipes, a classic chocolate layer cake is not among them. The authors redeem themselves by giving us a `healthy' recipe for chocolate chip cookies (sorry, no nuts). Even better is the even healthier oatmeal raisin cookies. Now why didn't I get this book before Christmas!
Reading this book in December makes one regret that all the best berries and stone fruits are out of season. Just Wait!!!
Reduced Calorie Desserts.......2006-10-27
Malgieri certainly is a fine baker, as his extensive cookbooks demonstrate. Here he teams up with healthfood writer Joachim to provide dessert collection with reduced caloric recipes, each said to be under 300 calories. Each recipe has nutritional breakdown.
They achieve this by reducing or eliminating amount of sugar, butter and eggs. They do not use articial sweeteners or egg substitutes or whole grain flours. One can try and substitute some of this out if glycemic index is important.
There are some fine recipes in this collection with nice large format, paper stock and color photos galore, along with Source recommendations, Ingredients & Equipment discussion. I'm into the likes of Gratin of Summer Berries (with a magnificent sabayon topping); Honey and Hazelnut Biscotti; Earl Grey Panna Cotta; Strawberry Meringue Tart; Chocolate Banana Custard Tart.

I always trust his books. They have been better than any other baking books I have used. I was a litttle put off that with so few calories the desserts would be good. No need to worry. The brownies alone are worth the price of the book. This is a wonderful book to have right before the holidays.
