This book contains recipes that nutitionally conscious people will love -- while using commonly available ingredients. As exciting as the recipes are, the nutritional information makes this a MUST READ cookbook. LOVE IT !! By incorporating these recipes or ideas into my diet (we still eat meat) and beginning moderate exercise (1hour 3xweek) I have cut my diabetes oral medication by half in less than one month !! Doc says 6mo - 1 year to be medicine free !! (after 3 years of gradually worsening diabetes) This cookbook could save your life !

The recipes in this book are some of the best available if you are serious about eating a healthy diet. They are not only vegetarian but they eliminate the refined oils and sugars which are such a major factor in causing diseases like atherosclerosis, heart disease, adult onset diabetes, high blood pressure and high cholesterol levels. They are the recipes used at the Newstart lifestyle program where they get excellent results with just diet and exercise. The recipes are delicious; we use them in our home all the time. I highly recommend this cookbook to my patients.

a solid good cookbook for those aspiring to the vegan diet. the only drawbacks being that some recipies require hard-to-locate ingredients such as vegan gelatin and smoked yeast. Other than that a very worthwhile purchase for those wishing to eat healthy, etc.

When Michael Milken was diagnosed with advanced prostate cancer in 1993, he wasted no time switching from his daily egg-and-bacon-sandwich breakfasts to a low-fat, vegetarian diet. He also founded CaP CURE, the Association for the Cure of Cancer of the Prostate. Through research supported by CaP CURE, Milken learned that cutting down on fat was not enough--that soy protein could be an important missing ingredient in his diet. The book presents recipes attractively. I've tried a few and they were easier and better than I expected, given the somewhat unusual ingredients for familiar foods. The book goes astray, to some degree, in my opinion, because it works too hard at recreating unhealthy high fat foods with low-fat, high-soy, equivalents. Better to just present vegetarian recipees that don't try to seem like something else.

I purchased this book because it contained recipes like flan that didn't require any dairy products. It also provides some great tips for substituting out ingredients like cream and other milk products without sacrificing texture and taste.

At first, I was a bit concerned that most of the recipes in the book called for ingredients that I had never heard of, but even the small health-food section of my local grocery store had almost everything that I needed.

The taste For Living Cookbook Mike Milken's Favorite Recipes For Fighting Cancer is a nicely photographed book. The recipes are basic health food fare. Cut down on fat,avoid meat, eat lots of veggies and soy. If I was a wealthy man I would have a professional chef move into my home and cook these complicated meals im my professional kitchen. I would also go to a medition center in Massachusetts "based on Ayurveda tradition" and I would "invite a doctor trained in both Western and Ayurveda medicine to move into...our house for a few months" I don't mean to be cynical but I have neither the time or money to follow this books recipes. I did not find this book very helpful .

All of the recipes in this book look delicious but after having the book for almost a year I have only tried out a few. The reason? Most of the main course recipes take over an hour to prepare. The Not-Meat Loaf, for example, is described as taking over 60 minutes and that doesn't include the time it takes to prepare cooked brown rice and lentils the recipe requires. This maybe fine for Mr. Milken, who can afford his own personal chef, but those of us in the real world need recipes that are not only healthy but quick.

Although not as practical as other cookbooks in some regards, this is definitely among my favorites. As other reviewers stated, some of the recipes are lengthy and best suited to weekends when you have a lot of time to do a major cooking session. What I love about this book is the whimsical nature of it, and the way Katzen conveys such love and joy at preparing the dishes. The hand-lettering isn't always super-easy to read, but it is such a treat! The illustrations, such as the comic-style guide to bread making, are fun. Also, it includes a really helpful guide to grains, including history, where to find it, how and why to use it, and especially, how to cook.
This book is a great addition to a vegetarian's cookbookshelf, though probably not ideal for a first book on veg cooking.

Sorry to say but the recipies in this book are yukky! I don't know what Mollie was thinking, she however is not the good cook people think she is.
You will be much better off sticking with the Moosewood cookbooks...every single one is truly wonderful. And the other reviewer was right, what's so special about the title recipie...nothing. Don't waste your money, I threw my copy out!

A fun cookbook to look through but when you start making the recipes, its actually a disappointment, especially considering how many gazillllllion copies have been sold of Ms. Katzen's books. Shows what the right marketing can do. The recipes that I tried were VERY hearty but not in a good way, too much fat and rich ingredients and strange combinations of these ingredients too . The Enchanted Broccoli Forest recipe is just a dish of rice with broccoli stuck into it, nothing special. I gave up after the 3 or 4th recipe. This is NOT one of the best veggie cookbooks out there, in spite of the hype!

i have many vegetarian cook books (ive been veg for over 7 yrs) & i use this one the most frequently.
it's simple, delicious, & lots of cooking basics, like pie crust & the (BEST, EASIEST) Indian flat bread, that most veg cookbooks leave out. We have also made delicious enchiladas, upside down vegetable cake, and more. My boyfriend is not vegetarian but he loves the delicious food too. The recipes in this book hold up even with major improvisation & experimenting which I love to do. There are also wide margins to write your cooking notes right next to the recipe.

Yes, many of these recipes take longer than heating up a veggie burger in the microwave but if you are concerned enough to eat vegetarian you should be interested in how to eat right, and sometimes that takes time.

There are 2 things I dislike: 1)the "prep" time listed for a recipe is too short in many cases- but once you make it you get an idea of how long it takes for next time. 2) the pages are regular paper, not glossy, so splashes always seem to find their way onto my book. However, its cheap enough & it dries fine, so just buy it & find your new veggie favorites :)

I've been in tune with Dr. Ornish since about 1997. I had 3 bypasses at that time. Using his simple techniques of eating well (and a lot), moderate exercise and relaxation techniques, I lost 120lbs. in 6 months and kept it off! This man is world renowned in his field and has yet to have any peers. That's right. This is the man that made Dr. Atkins look foolish in a debate on PBS! Dr. Ornish, thank you!

In order for this book to make sense you need to read Dr. Ornish's other book (Eat More, Weigh Less). This book is full of great food that is simple to prepare and very healthy. You won't miss the stuff you leave out.

Ah. Poor soul below me. Don't eat this or that. How about just plain good food and eat all you want of that?

We just got the book. I have been using fat free or almost fat free cooking for a while. My 90 pounds weight loss without even trying proves it has some benefits. I was not unhappy with those 90 pounds however the other half's heart was in serious trouble so I read Ornish and started to cook that way. Very simple and taste filled once you learn the principles and learn your spices. We have made progress.. A LOT. OH is now allowed to exercise a bit. The heart got better and I lost a LOT of weight.

The book is wonderful because it has the methods, tips and hints at my finger tips instead of having to get online and hunt em down I can flip thru them as I want. The recipes are set up seasonal which is great because that is what I should be eating at this time for the best flavor. I visted the produce stand locally and bought local homegrown veggies. Came home and simply flipped the book to spring. They are designed to be models. The recipes are nice but they give me a spring board for creating my own and the book gives me the info to do that. I am not wandering around blind and bemoaning my diet. It isn't one. It is simply good eating. The pantry section helps straighten out and guide your food choices. They don't leave you high and dry to cooking beans or grain. I had to go thru several books or search the net before if I hadn't cooked a bean in a long time or never to find out info on it.

It encourages new choices in produce. Fava beans are on my list now. I don't look at the grocery store choices the same way. It is a handy reference and nice guide. IF you use it correctly. I won't whine one bit. Darn good eating and it teaches you how to cook. You won't have to follow the recipe exactly after you get done reading it. You can make it what you want.

Dr. McDougall's change of food has helped me a great deal. I was having trouble with high sugar, triglycerides, etc and now am having trouble with iron in my blood. Eating no meat, dairy, white bread, white rice has brought all down and I am not hungry. It is filling and his books give me ideas for new recipes.

The great thing about a McDougall recipe is the spice blends. Mary McDougall really knows how to put spices together to make things delicious. I highly recommend this and other McDougall books.

In an 8 month battle with the health effects of years on the standard Western diet, this book is now the first off my shelf of cookbooks. (McDougall Quick and Easy is second).

The index is useful. The food is filling and tasty. The health effect is 65 pounds lost and cholesterol cut in half. You will satisfy your desire for good food and possibally save your life!

we happened across the mcdougall program through anthony robbins.we were total dairy and meat addicts and believed that it was really good to eat lots of it.however ,we did a 10 day challenge and cut it all out ,and have never looked back....blood pressure dropped,weight dropped,muscle tone and energy increased.we now have perfect skin and the whites of our eyes are now perfectly clean....so we are hooked...don't worry...he does say you can have a "feast food" on a special occassion, so you aren't going to have to never have your favorites..but you will discover an efficient well body that you never realised you had!. book is great...

I have used this book for a few years now and I love it. The recipes really are fairly fast and simple to follow. The nutritional information is provided for each recipe which really helps for people trying to follow certain diets like Weight Watchers. I recommend this book and have given it to others.

1 out of 5 stars It should be called "BEAN AND PASTA COOKBOOK.".......2004-06-17

I assume that these editors know that grains such as quinoa, amaranth, rye, spelt, kasha and [has no one ever heard of?] wheat can make fine main or side dishes. I had hoped for some new ideas for these and other grains and vegetables on which I have thrived for years. Have they never heard of porridges? If you want speed, make porridge. And quinoa cooks in about fifteen minutes. Most small or cracked grains cook in 15-20 minutes.

I had assumed that there would be SOME bean recipes, although I am deathly allergic to all beans, and SOME pasta recipes even though pasta, too, ill suits my own particular physiology. Unfortunately, this is a BEAN and PASTA book, with an occasional, genial but uninspired reference to other foods. It makes the book essentially useless to me.

Far better books are availabe: The Greek, Italian, Indian vegetarian cookbooks, whole grain cookbooks, natural foods cookbooks.

With recipes including Carribean, Italian, Thai, Mexican, and plain old American flavors, you can make gourmet quality meals much faster than using traditional recipes for similar dishes. Some newly available products, like hamburger-style "crumbles" and premade polenta tubes can make some of these recipes even faster. I just LOVE the Jamaican Jerk Tempeh served over noodles, and the vegetarian "Sloppy Joes." I'm online now to order some of the others in this "low-fat & fast" series.

I love this cookbook, use it all the time. One of my favorite recipes is the Mushroom Chowder...Yum!!! BUT....The nutrition information in the book is completely innaccurate - sometimes by more than 100 calories PER SERVING. Luckily I caught it before any damage was done.

In Moosewood Restaurant Low-fat Favorites the Collective emphasizes a few changes in basic cooking techniques to apply to everyday recipes and they offer tips and ideas for sustaining a low-fat lifestyle. Fat will not be missed in mouthwatering recipes like Guacamole with Asparagus, Chinese Orzo Vegetable Salad, Spring Vegetable Paella, Indian Potato Pancakes, and Creamy Dairyless Rice Pudding. Really love this cookbook! It is possible to make recipies that are delicious and low-fat. I can't stop raving about this book and tell anyone I can to buy it, it should be on everyone's cookbook shelf.

I'm a "veg head" and my family isn't. I use this cookbook as my main cookbook. Yes, sometinmes I "round out" a meal with a meat or fish, for my young sons, but mostly, we just eat a main course from here, and round out the veggie portion of what we haven't had that day.
Our favorites (and my neighbors, whom I sometimes share our meals with)are the black bean sweet potato burritos, black bean chilaquiles, Carribean stew, and the black bean chili (my elder son said it has all of his favrite veggies in it).
Yes, some are recipes that have "different" ingredients in them, but "different" can be good. My sons are adventurous eaters, with help from this cookbook.

3 out of 5 stars Is It Me or Is This Mediocre?.......2006-08-08

Over the past two decades I've been a huge fan of both the Moosewood cookbook and the Enchanted Broccoli Forest - eagerly gifting them to friends who profess having even the smallest interest in cooking vegetarian foods. While these books are a testament to how great vegetarian food can look, taste, smell and satisfy - once my metabolism slowed down I needed something with a little less emphasis on fat for flavor. As a member of WW I found the WW Versatile Vegetarian cookbook lackluster and uninspired - so I turned to the Moosewood Collective in hopes of finding LF veggie happiness.

Sadly, nearly ever recipe I've tried has seemed lacking - the spinach artichoke dip could benefit from the addition of some LF Mayo, the Mediterranean Stew seemed to yearn for some black pepper, the super bland Pasta and Sun-Dried Tomatoes needed a lot of something to bring it out of its flavor wasteland - so much so that I couldn't even figure out what would improve it.

That said - the versions found here of the North African soup Harira, the Japanese Soba & Veggie Soup and Vegetable Udon Saute and were all pretty darn good as is. There are a ton more recipes I would like to try - but for reliably good LF meals that don't disappoint, I'm more likely to reach for my tried and true WW cookbooks ("In One Pot" and "Take-Out Tonight") instead.

This is my favorite cookbook. I have used so many of its recipes, and have never been disappointed. The Butternut Squash Soup is great for Thanksgiving, and is my family's favorite soup. I highly recommend this cookbook!

I recently made the grilled nectarine recipe for brunch and it was a huge hit. I first skimmed this cookbook at M Cafe on Melrose and was thrilled to get it and find it was as easy to use, the the food as delicious to eat as the images made me believe. The images and recipes make this a useful book that can be used regularly in your kitchen.

This is one of my favorite vegetarian cookbooks, mainly because it is creative. I get tired of the same-old standard cook-the-tofu recipes, but this one has some unique combinations and great tastes. Some of the recipes are too time-consuming for me which is why I gave it 4 stars instead of 5.

I have been a vegetarian for more than 25 years, and this is my favorite cookbook of the dozens I have acquired. The recipes are varied and come out very well -- the Veggie Paella (pictured on the cover), made with the Mediterranean stock (recipe is also in the book), is out of this world! There are also wonderful recipes with quinoa and other grains and beans that aren't found in most cookbooks (try the quinoa tabouli or quinoa caviar for a treat!). I recommend this book for anyone who enjoys good meatless meals!

It's true. The recipes are good and only unnecessary fat is cut out. The recipes aren't too complicated or time-consuming and I haven't had a failure yet. If you like Alice Water's Vegetables, Deborah Madison and the like, you should enjoy this cookbook. Happy Cooking!

This books and all of Deborah Madisons' cookbooks are the standards in our household. If you only purchase it for two recipes the Paella and the Lasagna, you will have added great dishes to your menus. Your friends will love them too. They have flavor, texture, are visually impressive and fun to plan a meal around.

4 out of 5 stars More Than Lives Up to the "High-Flavor" Claim.......1998-02-25

Many of these dishes are unequivocal winners--particularly the roasted vegetable terrine, big chocolate cake with sour cream frosting and the bread with onion and cumin. However, I've found a high percentage of things I would never make, either because they go well beyond my tolerance for spiciness (obviously, this wouldn't be a problem for some people) or because they involve too much fuss and elaboration. Still, I recommend this book over Raichlen's early High-Flavor, Low-Fat non-vegetarian book. Maybe I'll never make the various filo-dough concoctions or the dacquoise, but I love the "three c's cavatelli," and there are plenty of tastes yet to sample that sound appealing. Unlike the non-vegetarian book, with which I have had a few disappointments in the kitchen, everything from this volume that I've made has turned out deliciously. And the photography is simply beautiful. Mr. Raichlen, you request feedback but do not give your e-mail address! If you e-mail me, I will happily go into more detail about my experiences cooking from your books, and with suggestions about the types of dishes I would like to see.

This cookbook provides recipes for simple and tasty meals using dried beans that can be found in any grocery store. I have other bean cookbooks that call for exotic beans that are difficult to find. My only problem with this book is that half of the recipes call for bean flours that are not so easy to locate. Health and specialty food stores may have one or two types of bean flours such as soy but not all of them called for in this book. The only place I could find pinto bean flour (used in many of the recipes) was in online stores with high shipping charges. The author directs the reader to Bob's Red Mill in Oregon but their web site did not offer any bean flours which may not be available anymore. Because I really wanted to try many of the recipes and I was intrigued with using bean flours in cooking, I took the author's advice and bought a K-Tec Kitchen Mill to grind my beans at home. I am happy with it and I think the instant refried beans made with pinto bean flour is tasty and will be a money saver over time. The soups thickened with bean flours will also be a healthy and tasty way to eat. If you are not interested in searching for bean flours or grinding them at home you may want to look at other bean cookbooks before you purchase this one. Although, this cookbook would be helpful for those allergic to wheat because the recipes show how bean flours can replace products containing gluten.

When I bought this book I thought I was getting a simple living book about how to cook beans. I guess I should have read more about it in amazon, but it reminds me of 1960s hippy commune vegetarian cooking. Not what I had in mind. A lot of soy, tofu, honey and all that. I wish someone would write a book about plain cooking that uses beans and meat!

Rita Bingham has included a lot of great recipes. I've learned a lot from her informational section on storing, grinding, soaking and preparing beans for different uses. I also appreciate her list of places that sell supplies.

This book is a great incentive to do more with beans than you ever thought possible. How to include them in everything from breakfast to main dishes to cookies and desserts. Also how to make tofu. A very inspiring book!
