I'm passionate about gourmet streaks as I call them, periods of time when I get into gastronomic investigation and concentration on techniques or cultural cuisine or flavor or ingredient, etc. I've had my crepes streak, my lemon streak, etc. Just discovering slow cooker, due to my wife's interest.
Alley's entry is fascinating as well: writers retreat, so fired up slow cooker to write, then modified world cuisine favorites, and thus we have this great cookbook.
Maryellen's spotlight review has it well: this is just a well-done creative cookbook, with exciting recipes prepared for slow cooker. TenSpeed Press I've found is just the best, known for quality photos and text and recipes such as this one exudes with.
Feast your slow cooker on these: Lamb Shanks in Tomato Sauce; Chicken Caccitore; Lamb Stew with Spinach; Artichoke Risotto (no constant stirring); There's even desserts and soups, etc. from Mexico, Italy, Greece, etc. Since this is of the gourmet bent,there is even wine/beer/ale suggestion with each recipe. One small criticism: wish he would have provided optional already crushed spices, such as cinammon, allspice, etc. Not everyone all the time has raw spices nor time to do the work of pulverizing them in processor or mortar/pestle.
As others have said, echo that this is winner of slow cooker collection. Hint well observed: saute first; flavor worth it if time permits.
Beyond Bean Soup.......2007-03-08
So many slow cooker cookbooks I've used are redundant...with the same recipe being presented over and over again with only one or two ingredient changes. The Gourmet Slow Cooker is definitely a different kind of cookbook. The recipes are interesting and unique. The book is organized by regional area, and the diversity in flavors and tastes is amazing.
Most of the recipes require a little more attention than the typical, "Throw it in the pot and set it to high," mentality presented in other slow cooker recipes. While I won't be using this cookbook for my typical work days, the recipes look like great options for the weekend when I have a little more time for prep.
Wonderful range of excellent flavors you don't expect from a crockpot.......2007-02-22
The Tarragon Chicken recipe alone was worth the price of admission, in my opinion. The deep flavors achieved require a bit more work than just throwing everything into the crockpot and turning it on, but these are meals you could serve company for a special occasion. Most recipes (though not all), require some prep work and time on the stovetop before you can throw everything into the slow cooker and walk away, but it is simple and straightforward work (as promised in the title), and the flavor payoff is huge. By no means a comprehensive catalog of every possible crockpot recipe, it does provide a tidy survey of several world cuisines that is managable to work your way through.
It's a lovely book to leaf through, full off good quality photos, and enough easy chat about each recipe to make them enticing to try, even if you're not familiar with the food of that particular region. As many others have said, this is not the book for anyone looking for three ingredients/two steps recipes, but it's perfect for someone looking to expand their use of their slow cooker, as it definitely broadens your thinking about what you can achieve with it. And you'll notice some simple techniques used throughout the book that will make incorporating it into your regular kitchen routines more realistic. It's hands down my go-to book when I want to savor something delicious for dinner but I can't (or don't want to) stand at the stove for a couple of hours cooking or monitoring it.
This is the book to help you finally realize the potential of the slow cooker to get amazing tasting meals with very little work, without any creeping sameness to the flavors boring you, should you to work your way through it from beginning to end. I would absolutely recommend it to anyone who already has a slow cooker, as well as anyone thinking about getting one, but may be concerned about having to compromise taste to get the promised convenience. This book delivers uncompromised depth and sophistication of flavors from the humblest appliance, which has a permanent home on my counter now.

I have made several recipes from this book and they have been great and easy to follow. this is the first cookbook I own from Cook's Illustrated and I'm now adding one more to my collection.
My Favorite Cookbook.......2007-04-03
This is my favorite cookbook, and I use it often. It not only has wonderful recipes that I use often, but also features little snippets and articles such as which tomato paste is best, how to know if your eggs are fresh, and how to choose a dutch oven.
My favorite recipes are the Macaroni and Cheese, which is a favorite at pot luck dinners, the Beef Stroganoff, Beef and Guiness Stews, 4 cheese pasta with basil and tomatoes, and there are dozens more I haven't attempted yet.
This book is not about your mother's (or maybe just my mother's) casseroles. The ingredients are top notch and the result is fantastic. I've given it as a gift on several occasions and can't recommend it enough.
There is not, as another person mentioned, an abundance of photos, and I do wish there were more, but I'd prefer great recipes and fewer photos over fabulous glossy photos and lackluster recipes, which I've found in plenty of other books!
Hungry for more pictures.......2007-03-08
I am inspired by photos of the finished products in any cookbook. So, this one disappointed with only a handful of photos. I would pay a few $ more for an abundance of delicious looking pictures. Cook's Illustrated is very dependable for excellent recipes and continues to be in this book. They have ironed out the wrinkles and achieve perfection with these recipes.

When I look at reader reviews of cookbooks, I want to see names of specific recipes that were outstanding, so here's one I tried last night: page 61, Chicken Casserole with Spring Vegetables and Tarragon Cream Sauce (oh, gosh, I just noticed it says it's for 6-8 people, and my husband and I snarfed down half!) Any other recommendations out there??

This is a great cookbook for anyone that has to cook for a group or just likes to cook dishes that can be enjoyed for the next few days. It is filled with warm and comforting recipes from a wide range of backrounds. Every recipe I have tried has come out as wonderfully as it was described. As is the case with all of the Best Recipe Classics cook books by the Cooks Illustrated editors this book includes comprehensive descriptions of the history of the recipes as well as the trial and error lessons that the test kitchen discovered in the process of perfecting the recipe. I have enjoyed this book so much that I gave it to a friend for Christmas.

Just more dumb crock-pot recipes that rely on one packaged product after another being dumped in. Why would I want to use a whole bottle of BBQ sauce in a recipe?
Where is the book that uses fresh ingredients, mixed together in a sensible (and maybe slightly creative??) way, simmers them together in the crock pot during the course of the day, resulting in an easy - and HEALTHY - meal? This book is NOT it!

I want a slow cooker cook book for main course recipes, this book emphasizes side dishes, desserts, etc. and has few main course recipes that interest me. Some of the ones I looked at said to cook 9 hours on high which doesn't make sense, based on my experience with crock pots, but I did not try them so can't say if the advice is wrong. I purchased used, cheaply, but would NOT pay full price for it.
Not well thought out.......2006-10-16
Although the recipes are lovely, too many of them (at least half!) have cooking times of 4 or 5 hours. So for the wonderful breakfast casserole, I'm supposed to get up at 4 a.m. to put it together for breakfast at 8? What were they possibly thinking? And I'm also supposed to run home from work at 2 p.m. to put dinner on for 6 p.m. that night? Huh? Maybe these recipes are supposed to appeal to folks who don't have jobs, and are free to start the meal at anytime (althought the 4 a.m. breakfast recipe still puzzles me). But are they really the folks who use slow cookers? Most of us want recipes that cook for at least 8 hours, so that we can put them on before we go to work and have them ready and waiting when we get home. Maybe someone at Southern Cooking needs a reality check.

The BEST slow cooker cookbook that I own!.......2006-02-11
This cookbook is absolutely wonderful! It runs circles around the Betty Crocker slow cooker cookbooks. I've tried several recipes, including the oatmeal, pulled pork, and breakfast casserole recipes, and they were all fantastic. This book contains a huge variety of recipes for everything from breakfast to dessert, but it does not scrimp on great dinner recipes. My life is so much easier now that I've re-discovered my slow cooker and this cookbook! Great variety of recipes, great pictures, and beautiful!

This is one of the best slow cooker books I've come across. The recipes are simple, tasty, and best of all - most have very few ingredients. I love to cook, but as a busy mom, I'm tired of recipes calling for 15 ingredients. Those recipes are fine for the weekends - this book is GREAT for the busy workweek.
I didn't realize until now that there is a whole series of these books - "101 Things to do with a ___________." Here I come!
Lazy Recipes with Prepared Food.......2007-01-07
The point of a slow cooker is to prepare something in one dish from wholesome ingredients and be done with it. Instead, the author has taken this to an extreme new low. There is no excuse to suggest recipes that combine canned chili and Velvetta cheese and actually consider that a slow-cooker recipe... not to mention even to consider that food!
If like me, you like to cook using top grade ingredients from scratch (mostly) then this is NOT the book for you. Processed ingredients like Chedder Cheese Soup, Chili, Spaghetti Sauce, Minestrone soup, Velveeta cheese, taco seasoning mix, bouillon cubes, jarred salsa, onion soup mix, canned chicken, cranberry sauce, scallopped potatoes from a box, salad dressing and even cake mixes are considered as proper ingredients for recipes in this book.
Personally, I have no problem when a recipe might include ingredients like Chicken broth, barbecue sauce or even onion soup mix, but this book really exaggerates. This is hardly "from scratch". Unless you really need a recipe to tell you to put pork chops and a jar of barbecue sauce together... skip this book.
Simplicity - How to cook out of your pantry.......2005-12-12
I love this book for what it is - a collection of simple recipes. Most of the ingredients are items you have in your pantry or freezer. It is a great book for the end of the week when you have not been to a grocery store in days. And the recipes are yummy. So if you are looking for a long list of ingredients and many steps of preparation this is not the book for you. If you want a book where in five minutes you can make a meal from your pantry this is the perfect choice.
Simple and Tasty!.......2005-12-08
This is one of the best books for slow cooker recipes, especially if you want something easy. It's great for when you don't have a lot of time but still want to make something that will taste good. My husband, a picky eater, makes a lot of requests for recipes from this book.
It's also a good basic book if you haven't really used a slow cooker before. The recipes are also pretty economic, using few ingrediants, but producing a lot of flavor.

I recently ordered this book and have tried three recipes in one week. I do not exaggerate when I say this is some of the best food I have ever tasted. The book warns to use only a non-glazed cooker, but I have a Schlemmertopf, which is glazed, and the recipes cook perfectly. Five Stars.
Wrong Book for my Clay Pot.......2004-04-27
I gave the book 5 stars because that is what most people do and the book probably deserves 5 stars. I may never use the book because nowhere was it mentioned that it was only for unglazed pots. My pot has glazed bottom, so now I must search for a book on using glazed pots. I had hoped for information for adapting recipes for microwave, but there was none.
No Time to Cook? Let the Claypot do all the work!.......2000-07-15
I purchased a Romertopf clay pot 5 years ago and bought this book soon after. Grover's Roast Chicken recipe was my first attempt and it was scrumptious! I steered clear of the recipes containing organs but I found that soups, stews and even breads turn out beautifully in the clay pot. I now have 3 sizes and would advise the user to line the pot with parchment paper just to reduce the cleanup time. This book helps to demystify a basically simple cooking utensil and you will love the results. Food is packed with flavor and moisture and you just have to sit by and wait to serve. It is a lifesaver for those of us who love a home-cooked meal but don't have the time after a long day at work.
The clay-pot classic shows it's age........2000-01-22
Georgia and Grover provide a fun read. There is not an intimidating, high brow paragraph in this book. The recipes include clear, easily followed directions. Reading the opening and any three random recipes will provide adequate information to make one an expert clay-pot chef. Don't let the organ meat recipes frighten you off. They make up a small portion of the book. The authors claim that clay-pot cooking is very healthy - low fat, low sodium, yet richly flavored. The definition of low fat, low sodium must have been much different in 1974. Many of the recipes in this book add unnecessary fat and salt. Some even call for bouillon cubes - Jean Bell's Beef Stroganoff calls for two cubes and is garanteed to make guests thirsty all evening! Most of the recipes are easily tweaked to meet low fat, low sodium guidelines. Nothing wrong with enjoying them in their original sinful forms! Just beware if you buy this book seeking health reform.
Excellent main dish recipies for clay pot.......1999-10-17
I have used this book for 20 years and am ordering a copy for friends. It is one of the two best clay cook books out of seven I have tried-- my other favorite is out of print. I have lots of our family all time favorites marked in this book. Many recipies are relatively low fat or can be modified and use a minimum of canned or packaged ingrediants. That's in contrast with "Cooking in Clay" by Joanna White-- which also has lots of breads and desserts, not the best use of the clay pot in my opinion.

Allrecipes taught me to cook..........2007-03-02
I have used a lot of the recipes in this book and I have loved most of them. The thing I like about allrecipes is you can go online and read reviews and suggestions for each recipe you want to make. I will normally choose one that I like and add my special touches and check out the reviews and add some of other peoples touches. When my husband and I first moved in together I was only 21 and could only cook macaroni and cheese. It was before the cookbooks came out and I searched for any recipe that looked good that I could see the nutritional info for. It helped me so much to not only make sure I was eating healthy but really taught me how to cook and experiment. I can't say that I'm a pro now but I never hear my husband complain. The ways I have learned to experiment using the allrecipes postings, reviews and suggestions has been absolutely priceless. If I ever need anything I go there first. I love having the cookbooks so it cuts down on a lot of the searching, I already know these have the highest ratings on the site...so I just choose and look it up and make notes on the reviews. Wonderful!!
not my kind of recipes.......2006-02-04
after reading the previous reviews, i thought it would be safe to order this book. i finally bought a crock pot and am looking for interesting recipes and information on adapting my regular recipes.
there are a few recipes i will probably try, but i was appalled at the number of recipes calling for canned vegetables--for crock pot use--canned soups, dry soup mixes, etc. i was also disappointed at the number of recipes that are very very similar to those in the two other slow cooker books i've bought.
i found the organization of the book annoying. the chapters are based on type of meats, and the slow cooker recipes and the casserole recipes are in each chapter. i would have found the book more convenient if it had been divided by slow cooker/casserole. that, of course, is a personal preference.
the one good thing about buying this book is that now i know that i will not be interested in the other allrecipes cookbooks that are now showing up in my recommendations.

I found this cookbook when I was searching on Amazon for crock-pot and casserole cookbooks because I wanted some new EASY recipes. Voila! Two books in one! Since this book is a compilation of the best rated recipes from the site Allrecipes.com, it's like getting each family's absolute best and favorite recipe. Lots of "secret ingredient" finds! Unlike most cookbooks, as I flip through this one, EVERY recipe is a "winner" that my husband and I would like to try. Since each recipe is from a different cook, the cooking styles vary widely throughout the book, unlike a standard book of recipes written by one or a few cooks. I find that in most cookbooks, all the recipes tend to draw from the same set of ingredients and/or always use the same cooking style, so you've really only paid for a few good recipes.
The only drawback to this book is that there are no pictures, since there aren't any on the website either. But reading through each recipe it is very easy to "picture" the dish. The instructions are clear and concise.
Another thing: Some of the recipes are very similar, i.e. a few different lasagna recipes, a couple crock-pot rib recipes. The good part about that is if you don't quite have everything on hand for the first one, you might for the second one! Knowing that now, I still would have purchased the book anyway. This might have bothered me except I think there are actually a few dozen more than the advertised 200 recipes in the book.
The book is divided up into chapters based on the main meat ingredient (i.e. beef, chicken, pork), including a "Meatless Mains" chapter and a side-dish chapter. The chapters are then further separated by crock-pot cooking or oven-baking. Some recipies are maybe only 4 ingredients (for the VERY busy day) and others might be over 20 and a little more complicated, but unique and tasty as a result!
I'm positive this cook book will be used MUCH more than the others that are collecting dust on my kitchen shelf.

This has been my most used cookbook. The meals are easy, have few ingredients, and tast fabulous. My husband has even tried to cook from this book--the first time ever. It's a must have.
Husband gives thumbs up!.......2003-11-27
It is time to get out your crock pot/slow cooker and get cooking. Think of the time you'll save. Dinner is ready and (ha) on time! Oh, the delightful smells in our kitchen. Just ordered this book recently. Have only made a few recipes (for example: Easy and Delicious Chicken p. 111 and Slow Cooker Cranberry Pork p. 68), but all were delicious and husband approved. (We have a rule at our home: thumbs up - make it again -or- thumbs down - don't even think about it.) Looking forward to more wonderful slow cooker adventures. One concern is that some don't appear to be low fat or low calorie (I would take off 1/2 star for that), so approach with caution and possible adjustments for health's sake. Yes, it has some very delicious looking casseroles too -- it's just that I'm into slow cooking right now. I agree with previous reviewer that nutritional information would be most helpful. By the way, don't need pictures...just a fork -- yum!

Bad recipes.......2007-02-07
This is a lovely, cheerfully written cookbook, and only one recipe I have prepared from it has been any good. The rest are boring and flavorless. I love casseroles, but I've finally given up on this book.
These are too much work!.......2007-01-21
To me, the whole point of a casserole is "quick and easy," so I want recipes where I just dump things into the casserole dish and put them in the oven. But, like many other casserole and "hot dish" cookbooks, most of the recipes in this book require you to do a tremendous amount of cooking and prep before you put the stuff in the casserole dish -- and, since the ingredients are already cooked, why do they need an hour of baking time? Answer: so they can be called "casseroles" or "one-dish meals". Most of these things could be stirred together and served right after the stove-top cooking process (maybe with minor adjustments), without wasting another hour in the oven. I would also add that many of these casseroles are loaded with butter and are too fattening for me. I took this book out of the library and photocopied about a dozen things -- that was it.
Worst Cookbook Ever.......2004-08-14
I hate to disagree with the glowing reviews for this book but since I relied on the other reviews I had read to buy this book, I thought maybe a differing view would be useful. I am a seasoned cook and can say that this is one of the most poorly written cookbooks I have ever cooked from. I have made 3 recipes thus far. All have had major proportion issues and have lacked flavor. Even corrections I made as I went based on previous experiences could not save these recipes. If you like food that is basic in flavor (kinda like standard cafeteria fare) then you will probably like this book. If you like flavor in your food, then I suggest not buying this one.
Best Casseroles cookbook with fascinating informations!.......2004-03-11
Although it requires some extra time to assemble, I always have plenty leftover to eat on next day. Also, I can freeze them. It is worth of extra labor. We really LOVE Blue Plate Beef and Cheese Noodle and Classic Tuna Noodle Casserole. Those really surprised our guests! Villas really made this close to perfect ones. I enjoyed his details on how he adjusted specific foods and the recipes' history. I like one straight way to a best casserole than trying on many recipes people giving or I find thru magazines. This book is one! Strongly recommend this one!
I also like the big book of casseroles by Maryana Vollstedt. The recipes give ingredients that I have on hand. They are mostly from stratch, not canned ones. Comparing to both book, Crazy about Casseroles is more like Classic, International, and Historic ones while the The Big Book of Casseroles is more on from stratch and similar ingredients on other recipes. I love both books, anyway!!
Old School Cooking from an Old School teacher.......2004-01-16
James Villas has written a book which may succeed in single-handedly succeed in reviving an interest in the great American casserole. I'm not entirely sure what the trendy term `old school' means, exactly, especially as I have mostly seen it in connection with motorcycles, but I am certain that Jim Villas is an `old school' culinary writer and that casseroles are an `old school' kind of food.
Jim Villas, although much younger, belongs to the James Beard school of culinary writing, along with his Beard protégés Barbara Kafka and Marian Cunningham. As he recounts in this book, the American casserole, based on several different European precursors, clearly reached it's apotheosis after World War II and went into eclipse in the late seventies and eighties with the scorning of canned and otherwise processed ingredients.
That the casserole is making a comeback is also clear from both this book and from it's starring role in a recent episode of Alton Brown's very trendy `Good Eats' Food Network show.
In the introduction to the book, Villas eschews some of the less savory casserole ingredients of yore such as canned meats and vegetables, frozen chives, dried parsley flakes, processed cheeses, liquid smoke, MSG, crushed potato chips or canned fruit cocktail. He is not entirely born again, since he does embrace some traditional casserole roles and ingredients such as canned soups, frozen vegetables, dried noodles, bread stuffings, and leftovers. In fact, some themes are so close to the `Good Eats' episode that I suspect Alton Brown may have used this book as a reference for his show.
The book opens with a very worthy introduction on casserole `hardware' materials and sizes plus advice on freezing casseroles. The casserole pantry repeats the theme of a reasonable use of prepackaged ingredients, citing Campbell's condensed cream of chicken, cream of mushroom, and cream of celery soups as essential. Some recipes even state that he tried to create the casserole with a homemade replacement for the Campbell's product and found the home brewed substitute wanting.
The names of casserole types are a feast for the crossword puzzle addict. There are quiches, stratas, scrambles, pilafs, pies, perloos, surprises, suppers, shroupes, royales, supremes, puddings, bakes, gratins, souffles, cobblers, crisps, crunches, and delights. Some of these names such as quiches, pilafs, and souffles indicate that the author may be coloring outside the lines a bit here and there, but I do not find this a criticism of the book. It adds to the value of the book as a source of good one-dish meals centered on the American classic. The author also seem to color outside the lines a bit when he includes some of his own recipes, but as Jim Villas has recently acquired the status of a classic American writer, I will give him a pass to contribute classic recipes himself.
This is one of my favorite kinds of cookbooks, as it makes it easy to find a recipe to fit a particular need. Anyone who shares that attitude about cookbooks will do well to purchase a copy of this book.

The thing I love about this book is that there are many classic recipes such as green bean casserole and lemon squares that are just so much better than the old recipes.This book is also good for company and large families(of which I am a representative).There are no bland recipes here.They are all to die for.If I had to choose one of my many cookbooks to rescue from a fire,this would definitely be it.

I ordered this and another Emeril Cookbook for my daughters Christmas present. When they had not arrived by the 20th, I called Amazon customer service. They said they would send out two more overnight. Well on the 22nd of Dec. both orders arrived here. They were opened by other than me. So now I have to send a set back to you. My most favorite cookbook - BAM!.......2005-12-27
I've always hated potluck occasions because I never knew what to bring. I've been to too many such occasions where the menu ended up being mostly deserts. So being a fan of Emeril's, I decided to give this book a try, and man, I'm glad I did. Everything I've made from it has been wonderful and well-praised. My husband's and my favorite recipe has to be the antipasto pasta salad. It whips up quick, so we often eat it for dinner. I spent several hours on Christmas Eve putting together a Breakfast caserolle for Christmas morning, and despite the prep time, I was still glad I made it because it was wonderful, and I learned to do something new.
Some reviewers might have a problem with Emeril using his spice blends in his recipes, but I find that a rather ridiculous conceit on their part. He developed these recipes, he uses these spice-blends in his cooking often, and it shouldn't come as a surprise to the buyer that they may appear in his books.
Anyway, this is my most frequently used cookbook and I can't recommend it highly enough.

Best casserole book around.......2007-01-03
The best thing about this cookbook is that it was meant for a homemaker. Virtually all the recipes can be made with items you have on hand in your cupboards and freezer. Simple, easy to follow instructions with excellent pictures of the finished casserole to help you choose which recipe to make! I bought one for a friend and then bought one for myself!

A New Favorite.......2003-12-08
After finding this book in the library and looking through it... I knew I HAD to buy it. There were just too many recipes I wanted to try. I usally only buy canned soups, and while I have used them in creative ways I never dreamed that they, along with dry mixes could add so much to so many foods! I plan on making one of the shrimp dip recipes for our department pitch in, and a co-worker is going to make the Tomato Soup Spice Cake. This book is for the novice as well as the experienced cook. Keep it handy.. you will use it often!
Good variety - Easy Prep & Cooking.......2003-11-09
This cook book is a must have for anyone needing new ideas for the family. A short grocery list is all thats needed to provide variety. I found that most of the items required were things I already had in the pantry. These dishes have very simple ingredients and I have found many that are winners with my sometimes picky young adult children. They are quick which is great for the working mom. Vegetables are used throughout, so it's not just a cheese and starch book. What impressed me most was the layout of the book itself - it's just as easy to find a new recipe as it is to prepare one.

I checked this out from the library after reading the great reviews. It gives some very helpful advice with a list of must have spices, herbs, and a list of the different soup mixes with an explanation of what each can be used for. There's also a section on recipes for dry rubs and seasoning mixes which was great.
I made the meatloaf last night with the beef onion soup mix and used cornbread stuffing in place of plain breadcrumbs and spread the ketchup on top. It tasted so good! Then I realized that I wasn't feeling like myself which usually happens after I have something with BHT or MSG (monosodium glutamate). All the Lipton soup mixes contain MSG. I was so disappointed. Unless I can find another brand of soup mix without MSG this book won't do me much good. :(
