He presents solid instruction for an appetizing meal in this cable access-style program. Enlisting the help of two audience members to slice, stir, and smash, Chef Paterson serves up parmesan chicken, with demi-glaze gravy, roasted garlic "smashed potatoes", and (although not listed on the cover) carrots almandine. Skipping over a few steps, but offering explanations for the exclusions (such as starting the vegetable demi-glaze early because of the considerable length of sauteing time,and pre-peeling the potatoes to be boiled), Paterson winsomely demonstrates techniques and shares suggestions (such as stressing the benefits of fresh and organic ingredients) in this low budget, though engaging, guide to create a mouth-watering meal.
